Transfer the chicken skewers to a platter or to individual dinner plates and remove the skewers. Drizzle the chicken and vegetables with dressing. Surround with flatbread quarters, cucumber-yogurt spread, sliced onion, sliced cucumber, and grilled tomatoes.

George’s mother roasted her chicken with dried oregano, basting often with lemon juice. That’s the Greek way, and we do the same at the restaurant, although we brine the bird first to season it. Then we spit-roast it in our fireplace, capturing the drippings to flavor potatoes. The recipe below, written for a home oven, comes close to replicating the succulence of Kokkari’s rotisserie chicken.
